Strawberry Smoothie with Flax oil
1 cup frozen or fresh strawberries
1/2 peach
1 1/2 cups unfiltered apple juice
1 tsp flax oil
Blend, chill and enjoy.
Creamy Raspberry Smoothie
1 ripe, peeled, pitted avocado
3/4 cup frozen raspberries
3/4 cup fresh or organic peach juice
3/4 cup unfiltered apple juice
Juice from 1/2 of 1 lemon
Blend all ingredients smooth and serve. (Peach juice can be substituted by doubling apple juice.)
Fresh Broccoli Salad with Dried Cranberries
6 cups organic broccoli, chopped into bite sized pieces
2 cups scallions, finely chopped
2 cups celery finely chopped
1/2 cup raw pumpkin seeds
1/2 cup bulk brand dried cranberries
Dressing:
1 cup raw vegan avocado mayonnaise (recipe below)
2 1/2 tablespoons red wine vinegar
1/2 tsp sea salt
1/2 tsp fresh ground pepper
2 1/12 tablespoons lemon juice
2 1/2 tablespoons agave nectar
Toss together the salad ingredients in a large bowl. Put dressing ingredients in the blender and blend until smooth and incorporated. Slowly poor and mix the dressing into the dry ingredients. Chill salad overnight.
Vegan Avocado Mayo (a great mayonnaise alternative for just about everything)
2 avocados
2 tablespoons walnut oil
2 tablespoons honey
1/2 cup pecans
1/3 cup water
1 tablespoon apple cider vinegar
1 teaspoon lemon juice
a dash of salt
a pinch of horseradish mustard (more can be added to taste or it can be omitted.)
Grind nuts in the food processor until they form a meal or flour-like substance. Remove nuts and add oil to the food processor, and begin blending as you feed in chunks of avocado. Once incorporated, slowly add back in the nut meal and process until smooth. Add wet ingredients slowly, tasting in between to make sure it is just as you like it. Use on other vegetables, or as a salad dressing.
